My Grandma Swanda died when I was in high school. She was a neat little lady. I remember going to her small apartment in Brainard, NE. She had this magical tin that she kept candies in. At each visit, one of us kids would work up the nerve to ask Grandma if we could have some candy. It seems like such a long, long time ago. Some of my favorite memories of Grandma’s house were- the butterfly quilt on her bed, how clean her apartment always was, the bulletin board of family photos she had, the games and toys she kept above her washer and dryer, (this lady was so creative with the tiny apartment she had to work with) a little buffet table where she would keep her cookies and most of all- I remember that she was a great cook. She made THE BEST gravy. You’ve heard of a “one butt” kitchen…well her kitchen was a half butt kitchen. Even so, she always made the best meals and if we were lucky she had made some of her AMAZING cookies. Which, thankfully, she pretty much always had! Here is a recipe in honor of my lovely Grandmother. She was famous (at least at our house) for her peanut butter cookies. You may be tempted to add or change things, but trust me- make it just as it is written and you won’t be let down. Enjoy!
Grandma Swanda’s Peanut butter cookies
1/4 c. margarine
1/2 c. peanut butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
1/2 t. vanilla
1 c. flour
1 t. soda
1/8 t. salt
Cream peanut butter and margarine. Add sugars, vanilla and egg. Beat well. Sift flour with soda and salt. Add. Shape one heaping teaspoon of dough into a ball, roll in granulated sugar and press on cookie sheet with tines of fork dipped in granulated sugar. Bake at 350 for 10 minutes. Makes approximately 30 cookies
