I wonder how many different cookie recipes I’ve made through the years?!?!?!?! I got my first cook book in 1st grade and have been baking and cooking since! In grade school I won a purple (or was it blue?) ribbon for my chocolate mint cookies. In 5th grade my science experiment was “Butter vs. Margarine”. We made chocolate chip cookies for our scientific taste test.
Well today I sought out to create my own cookie recipe. When cooking, it is very easy to create a new recipe successfully. When baking, it is a little more difficult. You have to have the correct ratio of ingredients or the cookies will be too flat, too cakey or worst of all…taste bad! Baking is a lot like a science experiment. I am very pleased to say that the cookies turned out AMAZING!
Peanut Butter*Coconut*Chocolate chip cookies
1/2 c. butter
1/2 c. peanut butter
1/2 c. brown sugar
1/2 c. sugar
1 egg
1 t. vanilla
1/2 t. salt
1 t. baking soda
3/4 c. unsweetened, shredded coconut
1 1/4 c. flour
1 c. chocolate chunks
Preheat oven to 325. Combine butters and cream. Add sugars, cream. Add egg and vanilla, combine. Add dry ingredients and mix. Add chocolate chips and fold in.
Bake for 8-12 minutes until golden brown.

I make cookies a lot. BUT-when I do make them I usually only bake one batch. This way I can roll the remaining dough into balls and freeze them for the next time we have unexpected guests
Here is a short video of Miles crawling! He is now crawling for even longer periods of time than this. He is also getting into a seated position on his own now AND pulling up to stand on the couch! He’s been busy and we are so excited
Greta has passed the princess stage and the tinkerbell fascination and has moved on to—-Opal the pig. She is so committed to being a real pig that she walks around with her hands like this…

Which makes doing things like opening a door or drinking a glass of milk a little difficult, but she will NOT break character and suffers through it!
We have even found her in her bed (after she has been tucked in for the night with her pajamas on) shivering in only her pull-up because everyone knows that animals do not wear pajamas!

Opal the pig DOES, however, wear swim suits. She also loves to hold hands…but once again, this is difficult because of the pig hands.
I love this girl!

This week is not going as planned.
This our schedule as it was and how it has been amended.
WEDNESDAY- Miles’ physical therapy cut therapy short due to a grumpy baby, Miles’ Dr. appointment with eye Dr. miss eye appointment due to high fever, vomiting, seizure and trip to the ER. Work on wedding music some more, Stay up all night with a baby that will barely sleep.
THURSDAY- Drop kids off at Nana’s, work on wedding flowers for this weekend and the mountain of Mother’s Day orders. Stay home with sick baby and go to work after Daddy gets home. Leave Greta overnight at Nana’s. Work feverishly to finish wedding and Mother’s Day flowers. Drive back to Lincoln late at night.
FRIDAY- Work on Mother’s Day flowers, Sing at wedding, Use replacement singers for wedding, Work on Mother’s Day flowers some more, Stay at Joe’s Dad’s house overnight. Go home after work and crash!
SATURDAY-Work on Mother’s Day orders. (hopefully this will stay the same)
SUNDAY-Sing at church, Drive to Neola for lunch, Drive to Wahoo for dinner. (I really, really hope this doesn’t change!)

We go to the Pediatric Neuro-Ophthalmologist today. As you can see in the photos he has one big pupil and one small. The eye drops that we are currently using dilate the pupil in his good eye, so he is forced to use his bad eye more. Today we will find out if it is helping!

#2. If you could do any job in the world and know you’d be 100% successful, what would it be? A background singer; I love singing harmony and do not have a desire to be the lead singer.

#4. Why is today special? Miles crawled 3 paces!!

#8. What are you listening to right now? I’d like to be listening to the Fleet Foxes.
#9. What’s your most challenging goal? To own a home in the next 2 years.
#10. What do you think about the person who tagged you? Kristen is an amazing lady. She has a smile that would make you think she’s never had a bad day in her life. She is the kind of mother that inspires and encourages me to be a better mom. We only know each other online, but I really wish she lived closer. We have a lot in common!
#11. If you could have your house totally paid for, fully furnished anywhere, where would it be? Martha’s Vineyard (yeah, right!)
#12. What is your favorite vacation spot? Napa/Sonoma, where we honeymooned.
#13. What would you like to have in your hands right now? A new sewing machine sewing curtains for the kids rooms.

#15. If you could go anywhere in the world for the next hour, where would you go? to Switzerland to have tea with my sister Jill.
#16. What super power would you like to possess? physical healing, for obvious reasons.
#17. What’s your favorite piece of clothing? The beautiful red dress my sister bought me for Christmas.
#18. What is your dream job? I actually have my dream job! I am a floral designer and I also get to work in the greenhouse which is SO MUCH FUN this time of year! The best part is the wonderful people I work with. I was telling my Mom that I think that if I worked with all the people I do, but we worked at a meat packing plant- it would still be an awesome job!
#19. If you had $150—what would you spend it on? Canvas storage boxes for toys in Miles’ room! Super boring, I know.
#20. What do you find annoying? speelling erors.
#21. Describe your personal style. I love fashion and really, design in any capacity. I just don’t have enough money to express my style!
#22. What is one of your secret skills? I know how to use pretty much any power tool or saw from my scene building days.
#23. What are you most proud of? I would have to say my little boy. They said he might not live. They said he might be a vegetable. He is so strong and has an amazing determination that is evident to anyone that watches him struggle to do the things that other kids do easily. He is the happiest, sweetest little guy and we thank God daily for how he has answered the many prayers for our little Miles.
#24. What is your typical morning routine? (on the days that I do not work) 6:45 am-Greta climbs into bed with us and says something like, “Mommy, Tinkerbell would like to wear her wings.” or “Baby Jag-bar (jaguar) would like to have some breakfast. ” Then Miles starts babbling in his crib. At about 7:15 I feed the kids breakfast. Miles has a banana almost everyday and Greta’s favorite is toast with “magic sprinkles” (cinnamon sugar). I clean the kitchen while the kids eat and Joe gets ready for work. After breakfast, we all get dressed. We play until 10am and then the kids have snack while I take a bath. After snack, Greta has table time where she works on letters, numbers, coloring, etc. while I work on Miles’ therapy exercises. Then we make lunch and…..it’s not morning anymore
