Mediterranean Turkey Burgers.

I whipped this healthy meal together very quickly.  I have to get all the healthy recipes in on nights that Joe works late 🙂 Greta and Miles both enjoyed these burgers, too.

Mediterranean Turkey Burgers

1lb. lean ground turkey

1 c. frozen spinach, thawed, drained and firmly packed

1/8 c. diced onion

1/4 c. shredded mozzarella

1/4 c. shredded sharp cheddar

1 t. dijon mustard

salt and pepper to taste

4-6 slices of your favorite bread

hummus, store bought or homemade

tomato, diced

mixed greens

1 large lemon

Preheat oven to 375. In large mixing bowl using either your hands or a rubber spatula, combine; turkey, onion, cheeses, spinach, mustard and salt and pepper. Use more salt and pepper than you usually do as turkey is pretty bland. Form into 4-6 patties and place on baking sheet. Bake for 15 minutes. Flip burgers and bake an additional 15 minutes. With 3 minutes left for the burgers, toast bread and spread with hummus.  Serve with greens, tomato and a squeeze of fresh lemon juice over top.
