Hmmmm…I have scallops in my freezer and quinoa on my shelf…I am intrigued as to how you will put them together. Will you tell us? Please???

Cook the quinoa how you would normally (I just use a rice cooker) While it is cooking, juice 3-5 oranges, tangerines, ,etc. (I used grapefruit because that was what we had, but oranges would be better) Heat 2 T. sugar(I use maple syrup) in skillet over medium until brown, add 1 T. apple cider vinegar (or balsamic) and juice from the oranges. Whisk. Boil over medium-high heat until thick.
Whisk in 2 T. butter. Keep warm. Salt and pepper scallops and sear on med-high heat in olive oil. Serve scallops over quinoa and drizzle citrus glaze. Fresh parsley is optional garnish.
We had this tonight!! 🙂
